Description
Citrus fruits bring a taste of freshness to any dish. We use not only the juice from this southern fruit to pep up a meal, but also the peel. Two particularly beloved citrus fruits are lemon and lime. You should, of course, only use untreated peel in your food!
Step by step instructions
ZESTING A LEMON
- Using the lemon zester, peel off the lemon peel in fine, thin strips. Take the lemon in one hand and draw the zester along the lemon from top to bottom. Collect the finely zested peel.
PEELING A LEMON
- Use a peeler to remove the peel from a lemon. However, be careful not to cut off any of the white pith as this tastes extremely bitter. Then, place the peeled strips white side down on the board and use a chef's knife to cut 2mm / 0.07inch strips.
LIME SLICES
- Place the lime on a board and hold steady with one hand. Then, use a carving knife to cut 6mm / 0.24inch slices, remembering to use the claw grip.
LIME CHUNKS
- Place the lime on a board and halve, then quarter it. Then, cut the lime wedges in half widthways.
