GARNISHING AN ORANGE

  1. Hold the orange with one hand and draw the channel knife along the orange from top to bottom with the other hand. Collect the zest. Then, cut the orange into 6mm / 0.24inch decorative slices.

SLICING AN ORANGE

  1. Using a paring knife, top and tail the orange. Then, starting at the top, slide a utility knife underneath the skin along the orange's curves to remove the skin from the flesh. Turn the orange and keep cutting until the fruit has been completely peeled. Place a dish under the orange to collect its juice. Then, hold the orange in place with one hand and, with a boning knife in the other hand, cut into the orange's membrane between the segments, releasing the orange slices.
