Mincing has a characteristic upwards and downwards movement from the tip to the heel. This cutting technique is perfect for chopping herbs and meat. One hand is folded around the handle of the knife and the other stabilises the point while the handle is moved up and down along the items to be cut. The wide, heel end of the blade is mainly used, which makes a large chef's knife ideal for this cutting technique.
