Marinated beef fillet slices with fried fennel bulb

Ingredients for 4 persons:

300 g beef fillet, cut into 3mm / 0.12inch-thick slices
1 tbsp sesame seeds
1 tsp ginger, finely minced
1 chili, deseeded, finely chopped
20 ml sushi vinegar
4 tsp sesame oil, roasted
1 fennel bulb
freshly ground salt

Preparation:

Season the beef fillet with salt and toast them for a few seconds on each side in a very hot pan. Quickly toast the sesame seeds in the same pan, then add chilli and ginger and quickly sweat before drenching with sushi vinegar. Transfer the contents of the pan into a small bowl and combine with the sesame oil.

Cut the fennel bulb into fine strips and sauté half of them at a high temperature. Spread both the sautéd and raw fennel onto the beef fillet portions and marinate with the sesame and chilli vinaigrette.
