Lettuce dressing

Ingredients for 4 persons:

1 lettuce
100 ml olive oil
30 ml white wine vinegar
50 ml chicken stock
50 g grated Parmesan cheese
2 anchovies
salt and pepper
grated peel and juice of one lemon
1 boiled egg
1 tbsp mustard

Preparation:

Wash the lettuce and separate the heart from the coarse leaves. Keep the lettuce heart.

For the dressing, mix the vinegar with the chicken stock, parmesan, anchovies, mustard, egg, grated lemon peel and lemon juice. Whisk the mixture together with the olive oil until light and fluffy. Season with salt and pepper. Then mix in the coarse lettuce leaves. Marinate the lettuce heart in the dressing.
