Mussels in white wine stock
Ingredients for 4 persons:
2 kg mussels
1 clove of garlic
1 white onion
4 tomatoes
100 ml white wine
half a bunch of parsley
50 ml olive oil
juice of one lemon
salt
pepper
Preparation:
Debeard the fresh mussels with a paring knife and rinse with clear water.
Blanch the tomatoes in hot water for a few seconds then peel carefully with a knife. Then remove the seeds from the tomatoes and dice finely. Peel the garlic and onion and cut into thin strips together with the parsley.
Heat the olive oil in a large saucepan and toss the onion and garlic briefly in the hot oil. Then add the washed mussels and the white wine and lemon juice.
Cover the pan and simmer for about 8-10 minutes. Then season with salt and pepper, add the diced tomatoes and parsley and toss briefly. My Serving suggestion: serve with white bread.
