Salmon fillet slices with herb mustard vinaigrette
Ingredients for 4 persons:
150 g salmon fillet cut into thin slices
1 tbsp honey
1 tbsp sweet mustard
1 tbsp chopped dill
1 tbsp chopped chervil
1 tbsp chopped parsley
20 ml white wine vinegar
50 ml vegetable oil
1 shallot
a little apple juice
Preparation:
Finely dice the shallots and sweat them in the butter until they are colourless, then place in a bowl.
Mix the honey, mustard, vinegar, oil and apple juice with the diced shallots. Season with salt, pepper and the chopped herbs.
Now marinate the slices of salmon in the herb mustard vinaigrette.
