Description

Chops, or cutlets, are slices of rib bone and are available in pork, veal, lamb and beef. The ribs are also known as a rack.

  1. Lay the rack of pork meat side down on a board and hold in place with one hand. Then, cut thick slices from the rack, with a bone making up the middle of a chop.
