Step by step instructions
- Using a flexible knife, cut in behind the drumsticks and down to the joint. Then, remove the drumsticks.
- Then, using a flexible knife, cut into the breastbone and separate the meat from the bone.
- Cut down to the wingbones and remove the meat from the carcass. Now, use a cleaver or chef's knife to chop off the wingbones at the joint.
- Finally, remove the skin, excess fat and gristle from the chicken breast. Expose the bones by pulling away the skin.
