Step by step instructions

  1. Using a flexible knife, cut in behind the drumsticks and down to the joint. Then, remove the drumsticks.
  2. Then, using a flexible knife, cut into the breastbone and separate the meat from the bone.
  3. Cut down to the wingbones and remove the meat from the carcass. Now, use a cleaver or chef's knife to chop off the wingbones at the joint.
  4. Finally, remove the skin, excess fat and gristle from the chicken breast. Expose the bones by pulling away the skin.
