Description
There are two types of oyster commercially available: the European oyster (from France, the Netherlands, Ireland and Great Britain) and the Pacific rock oyster (China is the largest aquaculture producer). An oyster always has a deep shell and a flat shell. Fresh oysters always have a tightly closed shell.
Step by step instructions
- Hold the oyster steady on a board, flat side down. Place an oyster opener into the gap in the oyster shell where the muscle is. Drive the knife in about 1cm / 0.39inch to detach the muscle.
- Use the oyster opener to lever the shell up, towards the back. Then, remove the lid and detach the oyster meat from underneath.
