The tunnel techniqueVideo: 00:53

Description

The tunnel technique is a safe cutting technique as your fingers are kept out of the way. It is ideal, for instance, for cutting potatoes with a paring or chef's knife. The food is held in place with the thumb and fingertips of one hand, while the palm between is arched up into a tunnel. Guide the knife between your fingers under the ‘tunnel' formed by your palm. Place the point of the knife on the board and cut downwards.
