Description

The saddle can either be cooked as a whole, or fillets can be cut out of it.

Step by step instructions

  1. Make an incision with the boning knife directly onto the backbone and cut along the side of this.
  2. Then, follow the course of the bone with the blade until the meat has been completely cut away from the bone. Try to remove the meat as close to the bone as you can.
  3. Finally, trim the meat by removing the gristle and fat.
